For a lot of people, the choice between whole bean and ground comes down to one simple thing: do you have a grinder, or a bean to cup machine that grinds for you? If you do, whole bean is the obvious choice. If you don't, ground is.
From the coffee's point of view, whole bean and ground aren't really two different products. They're the same coffee at two different points in its life. And the difference that matters most isn't which one you buy. It's how much time passes between grinding and brewing.
Is whole bean better than ground?
Not exactly better, but it does stay fresher for longer, and that's really the main difference. Once coffee is ground, far more of it is exposed to air, so it loses its aroma faster than whole beans do. You might come across the "15-15-15 rule" when reading about coffee freshness: beans are best within 15 days of roasting, ground coffee within 15 minutes of grinding, and green coffee within 15 months of harvest. It's something coffee people talk about, but we don't want to overcomplicate things. Whole bean simply keeps its flavour for longer than ground.
When does ground coffee make sense?
Ground isn't the wrong choice. It's the practical one if you don't own a grinder, don't want another piece of equipment on the counter, or just want your morning coffee to be easy. The real difference is between coffee that was ground recently and coffee that's been sitting pre ground for weeks, which is where most ground coffee's bad reputation comes from. Ayni coffee is roasted two to three days before it ships, so our ground coffee reaches you fresh. You don't need to buy whole beans just because someone told you that's what serious coffee people do.
When is whole bean worth it?
If you already own a grinder, or your machine has one built in, whole bean keeps more aroma until you're ready to brew. It also lets you adjust the grind if you switch brewing methods, which is useful if you move between a cafetière, a moka pot and pour over, since each works best with a different grind. Our guides to cafetière brewing and moka pot brewing go into each one.
So, whole bean or ground?
Have a good grinder? Choose whole bean. Don't have one? Choose ground. That's really it. Freshness matters, but good coffee doesn't need to become another hobby. The best choice is the one that gets you a cup you enjoy, consistently, without adding complication to your morning. At Ayni, every coffee comes whole bean or ground at the same price. Choose the coffee first, then the format that suits how you drink it.

Not at Ayni. Madrigal, El Tambo and Luna Decaf cost the same whether you choose whole bean or ground, for the same size.
What grind is Ayni's ground coffee? Medium grind.
